Shake N' Bake Chicken
Now is a great time to experiment in the kitchen with healthy yet simple recipes. Here is an old classic minus the artificial ingredients and high fructose corn syrup found in many store bought mixes.
Ingredients
- 4-6 pounds of organic chicken thighs and/or drumsticks
- 1 cup almond flour
- 2 teaspoons pink salk
- 1 teaspoon black pepper
- 3 teaspoons paprika
- 2 teaspoons cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1-2 teaspoons rosemary
- 1-2 teaspoons rosemary
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 425 degrees. Mix all dry ingredients in a glass dish (no need for a plastic bag). Drizzle the olive oil on a baking pan with sides (no need for tin foil). Place chicken piece by piece in dry mixture and coast both sides, then place it on the baking dish. Bake chicken uncovered for 40 minutes or until internal temp reaches 165 degrees.
Notes
- Serve with a plate full of veggies.
- Organic ingredients are always recommended if possible, especially the chicken.
- For those with almond sensitivities, quinoa flour is a suitable substitute.
- This recipe makes a large batch, cut in half for 2 people if need be.
